All in all I was actually only behind the bar at Hell's Kitchen from 2010 onwards, before that I was part of the general management team.  When I began writing my Master's Thesis I was unable to commit as many hours as I was clocking in general management and had the opportunity to request that I be placed elsewhere in the establishment.  At that time I had worked every single position in a restaurant besides bartending, and I was hankering to go back to my love of writing recipes and working with flavor profiles but didn't want to lose out on the face-to-face connection with guests by squirreling myself away in a kitchen.  So I took the time to learn from the stellar bar team that was in place at the time barbacking for the likes of Johnny Cupcakes and Chris Greenfield and became a part of the bar staff.

It didn't take long until I was working directly under the bar manager, Benny Benson and heading the insane infusion program that Hell's Kitchen offers.  The volume of the establishment was quite high and the desires of the customers across the board, so I worked long and hard to make craft cocktails available to be made at high volume with not only the in house infusions, but bitters, vermouths and cordials.

I also at that time got the privilege to work on specifically a craft cocktail night with Jasmine Poland that had a run of about a year and where we were pretty much given the keys of the place to use as our own personal cocktail lab.
